These Pineapple Coconut Margaritas are tropical cocktails that include tequila, triple sec, pineapple juice, coconut milk, lime juice, and Agave. Serve these in a salt-rimmed glass and enjoy with friends!

Coconut Lime Margaritas (with pineapple)

While I’m not a super-fan of coconut, I do enjoy using coconut milk in many of our recipes. We love adding it to curries – like Best Thai Red Curry Recipe, Curry Fish Stew, and Coconut Curry Vegetable Soup.

Instead of using coconut milk in this recipe, you could also use coconut cream. While coconut milk and coconut cream are both derived from coconut flesh, coconut cream is thicker, creamier, and has a higher fat content than coconut milk.

Since we prefer making cocktails that are slightly less fattening, we use coconut milk in these!

Why This Recipe Works:

  • CREAMY – The coconut milk adds a creamy texture to the tropical margarita. 
  • SUMMERTIME COCKTAIL – Pineapple and coconut are both tropical fruits that are known for their sweet and juicy flavors. This sweet and tart flavor is refreshing – perfect for sunny days!
  • LARGE BATCH – I recommend mixing up a large batch of this margarita, storing it in the refrigerator, and then shaking them in a cocktail shaker when serving to get them really cold! The perfect cocktail to serve at pool parties or for Cinco de Mayo celebrations!

What you’ll need to make a Pineapple Coconut Margarita:

You’ll need just six simple ingredients for these margaritas. You can easily find most of these at your local grocery store.

  • Tequila – Tequila is the primary spirit in a margarita and provides a distinctive smoky and earthy flavor to the drink. We prefer using blanco tequila in this classic cocktail recipe.
  • Cointreau – Cointreau is a premium orange liqueur that adds a touch of sophistication and complexity to this margarita. I’m a big fan of this liqueur for margaritas.
  • Limes – Fresh lime juice is tart and acidic and helps to balance the sweetness of the pineapple and coconut in the drink. It adds a bright and citrusy flavor to the cocktail.
  • Pineapple Juice – A sweet and tangy juice that is made from fresh or bottled juice. Pineapple juice adds a tropical and fruity flavor to the drink, along with natural sweetness.
  • Coconut Milk – Coconut milk is made from the flesh of coconuts and provides a creamy and nutty flavor to the drink. The creamy texture of the coconut adds a smooth and refreshing element to the drink. This coconut flavor is key to a tasty coconut pineapple margarita.
  • Agave – Agave nectar is a sweetener that is derived from the sap of the agave plant. It is often used as a substitute for simple syrup as it is sweeter than sugar and has a lower glycemic index.
  • Fresh Pineapple – Not required, but we like to use fresh pineapple chunks or wedges to add to the rim of the glass and/or a lime wheel.

How to make Pineapple Coconut Margaritas:

Step 1
Prep the limes. Use a citrus press to squeeze the limes for the margaritas.

Pro-Tip: It’s a good idea to let limes sit at room temperature for about an hour before squeezing them to get the most juice possible. You can also roll the limes firmly on a countertop or cutting board before cutting them open to help release the juice.

Step 2
Combine ingredients. In a large pitcher, combine the ingredients – tequila, Cointreau, pineapple juice, coconut milk, lime juice, and Agave. Stir well and chill.

Step 3
Prep the glasses. Add some lime zest and a little bit of salt to a plate. Then run a lime wedge around the rims of the glasses. Press the rims into the plate of zest and salt.

Add some pineapple slices to the rims of the glasses. Then add some ice.

Step 4
Serve cocktails. Before serving, use a wire whisk to mix the ingredients until frothy. Likewise, you could add some of the margaritas to a cocktail shaker and shake vigorously. Then pour the margaritas into the prepared glasses.
