Jalapeño Popper Dip

We LOVE making Bacon-Wrapped Jalapeño Poppers so this dip was a no brainer. You can grill the poppers or bake them and they won’t disappoint!

We’ve got a thing for spicy, and like I’ve said before, you can easily adapt any recipe to make it your own. So if you aren’t a fan of spicy, just cut back on the jalapeños (or leave out the seeds and ribs). I personally love to sweat when I eat so there is that. 😀

Freaky Friday Blog Hop

Why is today so special you ask? Well, that is because today is Freaky Friday, hosted by Michaela at An Affair from the Heart!  No, not the movie where the mom and daughter switch places, but a good old fashioned blog hop with some of my favorite food blogger buddies!

We secretly get assigned one another’s blogs to make a recipe from, and then we all reveal who we had and what we made on the same Friday, and that is today! See below for ALL the fun Freaky Friday recipes created by my blog hop friends!

Take Two Tapas

This is my first time in this group and I was super excited to “get to know” Jennifer from Take Two Tapas. On her blog, she shares easy appetizers, sweets, & thirst-quenching cocktails for any occasion with some useful tips thrown in!

Jennifer is a wife and a mom to two kids. I can relate to her description of legos and nerf darts everywhere, because while my boys are grown now, I have vivid memories of those fun-filled, tiring days with young adventurers!

I’m also a fan of small bites like Jennifer, and love to taste nearly everything. We love our Friday night charcuterie boards where I normally add a new dip or small bite to test. This gig has us trying new things on a constant basis.

When I saw that Jennifer had a Jalapeño Popper Dip on her blog, I knew it was the one for me. I have a thing for spicy, as you know, so this was a win/win for me! I made a few small changes to fit our tastebuds, but they are relatively the same.

Next up? I’m going to try her Street Corn Wonton Cups and her Sriracha Honey Bourbon Chicken Wings! Oh and for sure needing to try a cocktail or two – maybe this Pineapple Bourbon Lemonade!

Ingredients Needed for Jalapeño Popper Dip:

  • Cream Cheese – I normally use the light version of cream cheese, but regular works well too.
  • Mayonnaise – I prefer the mayo with olive oil, but your favorite mayo is great too.
  • Cheddar Cheese – You’ll need two cups of sharp cheddar cheese, freshly shredded.
  • Diced Jalapeños – One can of diced jalapeños, strained of most of the liquid.
  • Diced Green Chilies – One can of diced green chilies, strained of most of the liquid.
  • Seasonings – Garlic powder and ground cumin.
  • Bacon – Cooked and crumbled bacon. I recommend reserving some of the bacon to sprinkle on the top.
  • Panko Topping – A combo of Panko bread crumbs, parmesan cheese, and melted butter is the perfect topping for jalapeño popper dip.
  • Fresh Jalapeños – For serving, but optional. I like to thinly slice a small jalapeño and add it to the top. Use more if you like extra spicy!

How to make Jalapeño Popper Dip with Bacon

Step 1
Combine the cream cheese and mayo. In a mixing bowl, use a hand mixer to cream together the cream cheese and mayonnaise.

Step 2
Add remaining ingredients. Add the other ingredients – the shredded cheddar cheese, diced jalapeños and green chilies, seasonings, and half of the bacon. Blend again.

Step 3
Spoon into baking dish. Spoon the dip into a shallow baking dish.

Step 4
Make Panko topping. In a separate bowl, combine the panic topping – the bread crumbs, parmesan cheese, and melted butter. Add the topping to the dip.

Step 5
Add bacon. Sprinkle the remaining bacon and some extra slice jalapeños on top of the Panko mixture.

Step 6
Bake. Bake the dip in a preheated 350 degree oven for 25 minutes.

Step 7
Serve. Serve the hot dip with crackers or chips.

Expert Tips:

  • What substitutions can be made? You can use either regular full-fat cream cheese or the light version. Either will work just fine. You can also use plain Greek yogurt instead of the mayo for a lighter version. The bacon COULD be skipped but it’s so good in it. 😀 Feel free to play with the seasonings as well!
  • Can this be prepared in advance? You can make this up a day in advance and then bake the day of your gathering.
  • How long are leftovers good? Leftovers stay good in the refrigerator for up to 3-4 days. Just warm them up and dig in!
  • Can I freeze this dip? You could freeze this dip but I recommend freezing it before baking it. Then thaw out in the refrigerator and bake as directed. Also, I would wait to add the fresh jalapeños before baking as well.
