What You’ll Need:
- Italian sausage
- onion and garlic
- seasonings – kosher salt, freshly ground black pepper, Italian seasoning, and red pepper flakes
- all-purpose flour
- lower-sodium chicken broth
- whole milk
- parmesan rind – optional ingredient
- lasagna noodles
- parmesan cheese
- spinach leaves
Recipe Substitutions:
- Instead of Italian sausage, use ground beef, ground turkey, or even chicken.
- Use another type of pasta like penne, rigatoni, or broken spaghetti, instead of lasagna noodles.
- While we use whole milk, any other dairy works fine. Try half and half or heavy cream.
- Kale is a good substitute for spinach leaves.
- Try using another seasoning blend instead of Italian seasoning and red pepper flakes.
- Vegetable or beef broth could be used as a substitute for chicken broth.
NOTE: If you want a thicker soup, simply add more meat and/or pasta!

How to make Creamy White Lasagna Soup:
Step 1
Cook sausage and onion. Heat a stock pot over medium-high heat. Add sausage and onion and cook until sausage is browned and cooked through.
Step 2
Add garlic, seasonings, and flour. Add minced garlic and stir for 30 seconds. Then add the seasonings and flour and stir constantly for two minutes so that the flour absorbs into the grease.
Step 3
Add broth and milk. Then add the chicken broth and whole milk and stir well. Increase heat to get soup to a boil and then reduce slightly, stirring frequently.


Step 4
Add lasagna noodles. Add the lasagna noodles and stir. Let cook until pasta is al dente.
Step 5
Finish with spinach and parmesan cheese. Then add the fresh spinach and parmesan cheese and stir for another minute. Remove pot from heat.


Step 6
Serve soup. Serve white lasagna soup with extra parmesan cheese and shredded mozzarella cheese.

- 6 oz. lasagna noodles – broken into chunks
- 3/4 cup parmesan cheese – freshly shredded
- 3 cups spinach leaves – roughly chopped
- mozzarella cheese and extra parmesan cheese – to serve
