Strawberry Mojito Recipe

This Strawberry Mojito Recipe combine fresh strawberries, fresh mint, limes, white rum, and mint simple syrup – and are topped with some chilled club soda. These simple cocktails should definitely be served at your next adult gathering!

Best Strawberry Mojitos

Our mint plant in our mini garden (pictured below) is giving me life! It’s so nice to have fresh mint at the ready, especially for all the cocktails. In fact, this cutie came back after our winter and it’s thriving!

We don’t have a large garden by any means, but we do take pride in our cherry tomatoes, jalapeño peppers, fresh basil, cilantro, and mint! THESE are the things that I use on the regular. We are proud plant parents!

Ingredient Notes:

  • Mint Simple Syrup – A combo of water and sugar plus a few mint leaves.
  • Fresh Mint – Added to the simple syrup and muddled in the actual drinks.
  • White Rum – Use white rum, not dark.
  • Lime – Some lime chunks get muddled.
  • Strawberries – A few strawberries for muddling plus some for garnish.
  • Club Soda – Some cold club soda gets added to serve!

How to make Strawberry Mojito Recipe:

Step 1
Make the simple syrup (ahead of time). Combine the water and sugar in a small pan along with a few fresh mint leaves. Heat over medium heat until the sugar dissolves. Remove mint and refrigerate until ready to use for mojitos.

You won’t use all of this simple syrup for two drinks. But I make extra for additional drinks (or future cocktails).

Step 2
Combine ingredients in jar. In a large jar (or cocktail shaker), combine the lime chunks, chopped strawberries, and about four mint leaves.

Step 3
Muddle the ingredients. Add two ounces of simple syrup (or more for a sweeter drink) to the jar and use a muddler to “mush” everything together. You’ll want to break the strawberries and mint apart and muddle everything into the lime.

Step 4
Combine the mojitos. Then add the white rum to the jar and muddle again.

Step 5
Pour over ice. Fill two glass with ice and pour the mojitos over the ice.

Step 6
Add club soda. Then add the club soda and serve immediately. Add garnishes, if desired!

The fizz will only last for a little bit so don’t add it until you’re ready to sip! 😀
