Instant Pot Mashed Sweet Potatoes

Instant Pot Sweet Potatoes

Sweet Potatoes are a MUST at our holiday gatherings, and a highly requested dish for regular weeknight meals as well. We love them in all forms – roasted in the oven, mashed, or just baked with simple toppings. They are delicious with some fiery seasonings or sweetened up with sugar and cinnamon.

While my hubby rarely requests anything special for dinner, he does request sweet potatoes A LOT. They are a major super food, so why not?

  • Sweet Potatoes have over 400% of your daily needs for vitamin A in one medium spud, as well as loads of fiber and potassium.
  • They have more grams of natural sugars than regular potatoes, but more overall nutrients with fewer calories.

Why we LOVE this Recipe:

  • Saves oven space. Using the instant pot for these sweet potatoes is just plain smart. If you’re hosting people and have multiple dishes (think Thanksgiving or Christmas), you can time these potatoes to be done at meal time. Save the oven space for other dishes that require it.
  • Quick. These potatoes cook in just eight minutes in the instant pot. Then the ingredients are just added in and combined. Keep in mind that you’ll need time to heat up the instant pot as well.
  • Delicious. These are creamy, a little bit buttery, and the perfect side dish to various proteins.
  • Adaptable. You can easily adapt the ingredients, adding more or less to make your tastes buds happy.

Ingredients Used:

You can easily double this recipe for larger groups, especially during the holidays!

  • Sweet Potatoes – Three medium sweet potatoes, peel and chopped.
  • Butter – I always use unsalted butter, but salted works fine too.
  • Whole Milk – Whole milk adds richness to these potatoes. Feel free to lighten it up by using 1 or 2 percent.
  • Cinnamon – Sweet potatoes and cinnamon just go together!
  • Salt – A couple of pinches of kosher salt are needed to bring out the flavors.
  • Brown Sugar – I added a sprinkle of brown sugar to the top of these potatoes.

How to make Instant Pot Sweet Potatoes

Step 1
Prep potatoes. Peel the potatoes and chop into two-inch pieces. Place in the instant pot and add two cups of water.

Step 2
Pressure Cook. Place lid on the instant pot and close the vent. Select PRESSURE COOK and adjust time to 8 minutes. Wait for it to heat up and then it will start to pressure cook. After the time expires, the instant pot will beep. Carefully release the vent and let it cool off until you can remove the lid.

Step 3
Add ingredients and mash. Then add the ingredients – the butter, whole milk, cinnamon, and salt. Mash with a potato masher and test. Add additional seasonings as needed.

Step 4
Serve. Spoon sweet potatoes into a serving bowl. Add a sprinkling of brown sugar, and an extra pat of butter. Serve immediately.

How to prep in advance

To make these potatoes in advance for a holiday or any gathering, do the following:

  1. Make potatoes in the instant pot. Prepare as directed. Place in an oven (or microwave) safe dish.
  2. Refrigerate.
  3. To reheat in your oven, preheat to 350 degrees. Remove lid from mashed potatoes, place in the oven until warm, approximately 30 minutes.
  4. To reheat in microwave, place some paper towel over dish, and heat up for about 5-7 minutes. Test, and add more time as needed.

Ingredients

  • 2 ½ pounds sweet potatoes (about 3 medium potatoes) – peeled and chopped
  • 4 Tablespoons butter
  • 1/3 cup whole milk – more or less, to desired consistency
  • 1 teaspoon cinnamon
  • kosher salt – to taste
  • brown sugar sprinkle – or more, to serve!

Instructions

  • Peel the potatoes and chop into two-inch pieces. Place in the instant pot and add two cups of water.
  • Place lid on the instant pot and close the vent. Select PRESSURE COOK and adjust time to 8 minutes. Wait for it to heat up and then it will start to pressure cook. After the time is up, the instant pot will beep. Carefully release the vent and remove the lid when able.
  • Strain the liquid off the sweet potatoes.
  • Add the remaining ingredients to the potatoes – the butter, whole milk, salt, and cinnamon. Use a potato masher to mix everything together and mash as you go. Spoon everything into a serving bowl.
  • To serve, add a sprinkle of brown sugar, and an extra pat of butter. Serve immediately.

Notes

I recommend doubling this recipe for large groups!
