Brioche French Toast

Is there anything better than rich brioche bread dipped in a delicious custard and then lightly fried until golden brown? If you don’t believe me, then give this recipe a try!

Back in the day before we had kids, I made French Toast for Mike using thin store-bought bread. Believe me when I say that using thick-cut brioche makes the best French Toast!

Types of Bread for French Toast:

Choose what type of bread you’d like for your French Toast. These are homemade recipes but store-bought is ok too. Make sure you use thick sliced bread.

How to make Easy Brioche French Toast:

Step 1
Slice bread. Use a serrated edge knife to slice the bread in thick slices (about 1/2-inch thick).

Step 2
Prepare custard mixture. In a medium shallow dish, combine the eggs, milk, brown sugar, cinnamon, vanilla, and salt. Use a wire whisk to combine well.

Step 3
Lightly fry bread. Heat a nonstick skillet over medium heat. Add a pat of butter and let melt, spreading it around the pan. Then dip the brioche bread in the egg mixture, flipping it on both sides to give it a good soak.

Add soaked bread to the pan in a single layer (about two at a time, depending on the size of your skillet) and cook on one side for 2-3 minutes. Flip the bread and cook on the other side until golden brown.

Step 4
Repeat. Repeat the process until all the bread is dipped and cooked.

Step 5
Serve. Serve French Toast with some extra butter, a sprinkle of cinnamon or powdered sugar, some maple syrup, or your favorite toppings.

Step 6
Keep warm. I recommend placing cooked slices of French Toast on a rimmed baking sheet in a preheated 200-degree oven to keep warm.

STORE leftover French Toast in an airtight container for 2-3 days in the refrigerator.

Recipe FAQs:

Can I use regular bread instead of brioche bread?

Yes, you can use regular bread, but brioche adds a rich and buttery flavor to the French toast.

How do I make the cinnamon sugar mixture for French Toast?

Mix cinnamon and sugar in a bowl; a common ratio is 1:4 (1 part cinnamon to 4 parts sugar).

Should I use whole eggs or egg yolks for the French toast custard?

You can use whole eggs for a balanced texture, or just yolks for a richer custard-like consistency.

Can I make the egg custard the night before if planning a brunch?

Yes, preparing the batter the night before and refrigerating it allows the flavors to meld. Just whisk it before use.

What type of milk works best for French Toast?

Whole milk works nice, but if you want a richer custard you can use a combination of whole milk and heavy cream.

Do I need to let the Brioche slices dry out before using for French Toast?

It’s best to use slightly older bread for French Toast so the bread doesn’t get overly soggy when dipping in the custard. However, you don’t need to let them dry out too much.

Can I freeze leftover French Toast?

Yes, you can freeze leftovers by placing parchment paper in between slices and place in freezer bag. Reheat in a toaster or air fryer.
