Ingredients Used:

These are simple to find ingredients in your local grocery stores. The most important thing is to get quality ingredients. The fresher the better!

  • Raw Brussels Sprouts – You’ll want about 5 cups of shredded sprouts or 1 pound (after removing outer leaves and stem).
  • Green Onions
  • Ripe Pears
  • Dried Cherries – You could also try dried cranberries or other dried fruit.
  • Crumbled Goat Cheese
  • Slivered Almonds – Instead of almonds, try sunflower seeds, pecans, pine nuts, or another nut.
  • Extra-Virgin Olive Oil
  • Freshly Squeezed Lemon Juice
  • Apple Cider Vinegar
  • Dijon Mustard
  • Granulated Sugar – Or use honey instead
  • Kosher Salt & black Pepper

How to make Shaved Brussels Sprouts Salad Recipe:

Step 1
Make dressing. In a small bowl, combine the dressing ingredients – olive oil, lemon juice, apple cider vinegar, Dijon Mustard, sugar, salt, and pepper. Use a whisk to combine well. Transfer dressing to a small mason jar.

Step 2
Prep Brussels Sprouts. Remove the outer leaves of each Brussels Sprout and slice off the hard stem end. Then use a sharp chef’s knife and a cutting board to slice in half and then shave the veggies. The thinner the better.

Step 3
Toast the almonds. Heat a nonstick skillet over medium heat. Add the slivered almonds and cook until golden brown and fragrant, stirring frequently. Don’t burn them!

Step 4
Assemble salad. Add the thinly shaved Brussels sprouts to the serving bowl. Add green onions. Then layer the thinly sliced pears, slivered almonds, dried cherries, and crumbled goat cheese.

Step 5
Add salad dressing. Drizzle the creamy dressing over the Brussels Sprouts Salad and stir well to evenly coat the ingredients.

Step 6
Serve. Serve salad in individual serving bowls.

To Prep Salad Ahead:

  • Make dressing. Combine dressing ingredients and store in a mason jar in the refrigerator.
  • Prep Brussels Sprouts and green onions and store in a ziplock bag.
  • Toast almonds and store in a small bowl (covered).
  • Combine the ingredients when ready to serve.

Store leftovers in an airtight container for a day or two. The pears may turn a little brown so I recommend adding only as much as you need.

Raw Brussels sprouts have a crisp texture and a slightly bitter, earthy taste. Some folks describe the flavor as cabbage-like (as Brussels sprouts are part of the same family as cabbage). The bitterness can vary from one Brussels sprout to another, and it tends to be more pronounced in larger, older sprouts.

What are other ways to shave Brussels Sprouts?

Instead of thinly slicing the Brussels Sprouts, you could 1) use a food processor, or 2) buy the package sprouts. However, the food processor tends to grind them up too much or make them uneven, and the package sprouts are often poorly shaved with too many hard ends. You can also try using a mandoline slicer if you have one (but watch out, they are sharp!). I highly recommend using a sharp knife instead.
