Ingredients
For the salad:
4-5cups Brussels sprouts (or about one pound)- outer-leaves removed and shaved
2largepears- sliced thin
1/4cupgreen onion- diced
3/4cupslivered almonds- toasted
3/4cupdried cherries- or use another type of dried fruit
3/4cupgoat cheese- crumbled
For the dressing:
1/2cupextra-virgin olive oil
2Tablespoonsapple cider vinegar
1Tablespoonlemon juice- freshly squeezed
1TablespoonDijon mustard
2teaspoonsgranulated sugar
kosher salt and freshly ground black pepper- to taste
Instructions
Make dressing. In a small bowl, combine the dressing ingredients - olive oil, lemon juice, apple cider vinegar, Dijon Mustard, sugar, salt, and pepper. Use a whisk to combine well. Transfer dressing to a small mason jar.1/2 cup extra-virgin olive oil, 1 Tablespoon lemon juice, 2 Tablespoons apple cider vinegar, 1 Tablespoon Dijon mustard, 2 teaspoons granulated sugar, kosher salt and freshly ground black pepper
Prep Brussels Sprouts. Remove the outer leaves of each Brussels Sprout and slice off the hard stem end. Then use a sharp chef's knife and a cutting board to slice in half and then shave the veggies. The thinner the better.4-5 cups Brussels sprouts (or about one pound)
Toast the almonds. Heat a nonstick skillet over medium heat. Add the slivered almonds and cook until golden brown and fragrant, stirring frequently. Don't burn them!3/4 cup slivered almonds
Assemble salad. Add the thinly shaved Brussels sprouts to the serving bowl. Add green onions. Then layer the thinly sliced pears, slivered almonds, dried cherries, and crumbled goat cheese.1/4 cup green onion, 2 large pears, 3/4 cup dried cherries, 3/4 cup goat cheese
Notes
To Prep Salad Ahead:
Make dressing. Combine dressing ingredients and store in a mason jar in the refrigerator.
Prep Brussels Sprouts and green onions and store in a ziplock bag.
Toast almonds and store in a small bowl (covered).
Combine the ingredients when ready to serve.
You'll want about 5 cups of shredded sprouts or 1 pound (after removing outer leaves and stem).NOTE: Instead of thinly slicing the Brussels Sprouts, you could 1) use a food processor, or 2) buy the package sprouts. However, the food processor tends to grind them up too much or make them uneven, and the package sprouts are often poorly shaved with too many hard ends. You can also try using a mandoline slicer if you have one (but watch out, they are sharp!). I highly recommend using a sharp knife instead.
