Cheese Dip
Who doesn’t love a good cheese dip? Whether it’s a Spicy Beer Cheese Dip, Pepper Jack Queso, or Southern Pimento Cheese, we love them all because there is one common ingredient –> CHEESE!
Whether it’s game day, a holiday party, or a casual backyard gathering, we love a flavorful dip. The best way to enjoy the perfect cheese dip is to serve it with some homemade pretzels and your favorite beer. While we like a good IPA or a dark beer, light beers or even non-alcoholic beer pairs well too!
Why This Recipe Works:
- SIMPLE – Yup, just five ingredients and 15-20 minutes from start to finish!
- CREAMY – The roux plus the cheese adds to the ultra-creamy texture of this dip. I like to let it sit for a bit after combining ingredients to let the dip get a little thicker.
- DELICIOUS – This dip is pretty standard and starts with a roux. Adding the cheese and hot sauce adds a little heat but dfineitly not too much.

What You’ll Need:
All of these simple ingredients are available in most grocery stores.
- Unsalted Butter
- All-Purpose Flour
- Milk – I use 2% milk but whole milk is a great substitute.
- Shredded Cheese – Use a box grater to shred a chunk of sharp cheddar cheese. White cheddar or gruyere cheese could be used instead, if desired.
- Hot Sauce – We like Frank’s.
- Salt & Pepper

How to make Pretzel Cheese Dip:
Step 1
Make the roux. In a small saucepan, melt the butter over medium heat. Add the flour and stir to incorporate fully.
Step 2
Add milk. Then add the warmed milk (and salt and pepper) and stir until slightly thickened.
Step 3
Add cheese and hot sauce. Finally, over a very low heat, add the shredded cheddar cheese and a little bit of hot sauce and stir well until creamy.

Step 4
Serve. Remove the pan from the heat and spoon the cheese sauce into a serving bowl. Likewise, you could add the cheesy sauce to a small crock pot to keep warm for small gatherings.
You’re ready to dip away!
