Oh, summertime eating! This combo is just what we need when the thermostat reads over 100 degrees F. If you are a fan of fresh fruit in your green salads (WITH the creamiest cheese!), this recipe is for YOU. This stone fruit salad is a game-changer.

Ingredients Used:
This salad is best using seasonal ingredients. Peach season is normally from May to August down south so we’ll be eating it on repeat all summer long.
- Lettuce Greens – Any of your favorite greens work, but we used butter lettuce.
- Juicy Peaches – For grilling, it’s best to use ripe-but-firm peaches. The grill will bring out the natural sweetness.
- Red Onion – Use raw onion or preferably, the best Quick Pickled Red Onions!
- Burrata Cheese – Burrata cheese is a type of Italian cheese that originated in the Apulia region of southern Italy. This creamy ball of deliciousness is made from cow’s milk and is known for its creamy and delicate texture. Burrata is a fresh cheese, similar to mozzarella, but it has a unique filling made of stracciatella, which consists of shreds of mozzarella mixed with cream.
- A simple dressing – Use a combo of olive oil, balsamic vinegar, kosher salt, and freshly ground black pepper.
- Top the peach salad recipe with fresh herbs. We love fresh basil or fresh mint!
How to make Peach Burrata Salad Recipe:
Step 1
Prep ingredients. Clean the butter lettuce, drain the burrata, and make the pickled onions (ahead of time).
Step 2
Grill peaches. Slice the sweet peaches into pieces for grilling. The shape and size are up to you but don’t slice small. You want to keep them from turning mushy.
Brush the peaches with a bit of extra virgin olive oil or avocado oil. Place on grill grates (cut side down) and cook at medium-high heat for 2-3 minutes per side. You are looking for grill marks.
Alternatively, if you don’t have an outdoor grill, use a grill pan indoors.
Step 3
Combine salad ingredients. Combine the butter lettuce, pickled red onions, creamy burrata cheese, and freshly grilled peach slices in a serving bowl.
Step 4
Make dressing. Add olive oil, balsamic vinegar, salt, and pepper in a small mason jar. Shake vigorously.
Step 5
Add dressing to the salad. When ready to serve, drizzle the dressing on top of the fresh salad.
Step 6
Serve. Serve this beautiful salad immediately with some freshly ground black pepper, and enjoy!

Possible Variations:

- Add some protein like serrano ham or salty prosciutto. Pine nuts would be nice too.
