Ingredients
Salad ingredients:
6-8cupsbutter lettuce- or other greens
1/4cuppickled red onion- or any onions
3mediumripe peaches- sliced
8ouncesburrata cheese- liquid drained
fresh basil- optional
For the simple dressing:
2Tablespoonsolive oil
2Tablespoonsbalsamic vinegar
kosher salt and freshly ground black pepper- to taste
Instructions
Prep ingredients. Clean the butter lettuce, drain the burrata, and make the pickled onions (ahead of time).
Grill peaches. Slice the peaches into pieces for grilling. The shape and size are up to you but don’t slice small. You want to keep them from turning mushy.Brush the peaches with a bit of oil. Place on grill grates and cook at high heat for 2-3 minutes per side.3 medium ripe peaches
Combine salad ingredients. Use a serving bowl to combine the butter lettuce, pickled red onions, creamy burrata cheese, and freshly grilled peaches. Add some fresh basil if you have it available.6-8 cups butter lettuce, 1/4 cup pickled red onion, 8 ounces burrata cheese
Make dressing. Combine the olive oil, balsamic vinegar, salt, and pepper in a small mason jar. Shake vigorously.2 Tablespoons olive oil, 2 Tablespoons balsamic vinegar, kosher salt and freshly ground black pepper
Add dressing to the salad. Drizzle the dressing on top of the fresh salad.fresh basil
Serve. Serve salad immediately with some freshly ground black pepper, and enjoy!
Notes
For grilling, it’s best to use ripe-but-firm peaches. The grill will bring out the natural sweetness.We love these Quick Pickled Red Onions. Make them a few days ahead of time and add them to salads and sandwiches!
