Lucky Black-Eyed Peas

We’ve lived in Texas for almost 30 years now. After the first couple of years of getting used to hearing “y’all” and “bless your heart”, we learned a new and very important tradition – eating black-eyed peas on New Year’s Day for luck.

I remember talking to friends at work and them being utterly shocked that I wasn’t whipping up a batch of black-eyed peas for the new year. But it’s a southern tradition so I had no clue. Now that Mike and I have lived here for almost half of our lives, I’m a believer. Bring on the black eyed peas!

What You’ll Need:

  • Black Eyed Peas
  • Corn
  • Sliced Jalapeños
  • Red onion
  • Cilantro
  • Avocado
  • Salt and Pepper
  • Olive Oil
  • Lime
  • Tostitos

How to make Black Eyed Pea Dip:

Step 1
Prep canned goods. Rinse and drain black eyed peas. Add to a large mixing bowl. Drain canned corn. Add to the bowl. Drain pickled jalapeños and add to the bowl.

Step 2
Prep fresh veggies. Chopped red onions, cilantro, and avocado. Add to bowl.

Step 3
Top with olive oil and lime juice. Top the dip with olive oil and fresh lime juice. Add salt and pepper and stir to combine.

Step 4
Serve. Add dip ingredients to a serving dish. Serve with Tostito scoops.

Prep Ahead and Storing:

  • To prep ahead, combine everything but the fresh avocado and store in the refrigerator. Add avocado right before serving!
  • Store leftover dip in an airtight container in your refrigerator for 2-3 days. (The avocado will brown eventually, however.)

Ingredients
