I’m always looking for an excuse to make something out of ice cream. Because I’ve got that gene that makes me crave it. I’m blaming my parents for this one. My childhood memories are filled with making homemade ice cream, and of the Schwann’s delivery truck pulling into our driveway on a regular basis. In fact, my dad and I believed that the best way to eat ice cream was late at night, after everyone was in bed, where we stood with spoons and the tub of vanilla ice cream. Just him and I “double dipping” for a good 15 minutes or so. I love these memories.

Over the holidays, Mom – aka Norma Jean – (or one of us kids) was known to mix up a quadruple batch of some sort of frozen cocktail. We’d make multiple batches in the blender, and then pour it into a huge container of some sort (often a recycled ice cream container). Two favorites were Frozen Grasshoppers and THIS one (although we named it something else).

This recipe is SUPER easy.

  1. Grab your blender. I’m loving my Vitamix and highly recommend getting one if you are into all the smoothies and such.
  2. Add the Kahlúa, Creme de Cocoa, and softened ice cream. Blend together.
  3. Add ice, and continue blending until well combined.
  4. Pour into a large container with lid.
  5. REPEAT.

The half gallon pictured below makes two recipes, and will be gobbled up quickly. Trust me. You may want to make more for large gatherings. And p.s. – the smiley face on the ice cream encouraged me to have a cocktail after blending. Cuz why not?

Tips and Tricks for making this frozen cocktail.

  • Add the liquid ingredients to the blender first, to make it easy to blend.
  • Soften your ice cream slightly. I like to use the microwave for this, but don’t melt it!
  • Make sure the ice gets well blended. You don’t want large ice chunks in the cocktail.
  • The shaved chocolate on top is for presentation purposes only.
  • TRY not to inhale it all when you make it.

Holidays are such a special time of year for me. There are sad memories, but mostly happy. Recipes that make me think of my loved ones are bittersweet, because I love the memories but they also make me miss being together. Christmas is now spent in Texas, after years and years of traveling to Iowa to be with family. We have girlfriends in the picture now, and we’re making NEW memories here. Life is about all of that and more. We’re so blessed to have our family, near and far.

Enjoy this sacred time, and cheers to making memories!

  1. So many memories around this drink. I remember making them with Mom and sending Dad “to town” for more ice cream. We had to make 3 kinds, filling 3 buckets and of course sampling along the way!!! Yum, yum and yum!!
