Gingerbread Granola
Bring on gingerbread everything. It’s almost Christmas!
There is nothing like homemade granola and our family is nuts about it. Yogurt and granola, fruit and granola, milk and granola, and just plain ole granola…eaten by the handful. We keep it in the freezer because it’s best served cold.

Why This Recipe Works:
- SIMPLE PROCESS – The process is simple. Just mix the dry ingredients and the wet ingredients, combine, bake, and cool. No problem!

- FULL OF FLAVOR – I’m a huge fan of gingerbread so this granola is one of my favorites. Plus, we’re adding white chocolate chips and craisins for even more flavor!

Ingredients Used:
These are basic pantry staples that I usually keep stocked in our kitchen.
- Base Ingredients – old-fashioned oatmeal, chopped pecans, and chopped almonds
- Spices – cinnamon, ginger, nutmeg, cloves, salt – plus brown sugar
- Wet Ingredients – avocado oil, honey, molasses, and vanilla
How to make Gingerbread Granola:
Step 1
Prep. Preheat oven to 325 degrees. Add parchment paper to a large baking sheet.
Step 2
Combine dry ingredients. Combine the oatmeal, almonds, pecans, brown sugar, salt, cinnamon, ginger, nutmeg, and cloves in a large mixing bowl. Stir to mix well.
Step 3
Combine wet ingredients. Pour wet ingredients into a glass measuring cup (2 cups) – the avocado oil, honey, and molasses. Heat in the microwave for one minute.
Step 4
Pour wet ingredients into the dry. Pour the wet ingredients into the dry and stir to combine. Add mixture to a prepared baking sheet and use a spatula to smooth to all sides of the pan.
Step 5
Bake. Bake granola for 15 minutes, rotate pan, and bake for another 5-10 minutes or until golden brown. The edges may get a little dark but watch it closely to avoid burning.
Step 6
Cool. Let the granola sit in the pan until cool. Then use your hands to break it up into smaller pieces.
Step 7
Add Craisins and chips. Add the Craisins and white chocolate chips to the cooled granola.
Storing and Freezing
- Store granola in an airtight container or a large storage bag for about one week.
- Freeze granola in a freezer bag for up to three months (or more)

Yes, feel free to choose your favorite nuts and dried fruits to personalize this granola to your taste.
The honey and molasses will add sweetness to the granola, but brown sugar can be added for a little extra sweetness.
Ground cinnamon, ground ginger, ground nutmeg, and ground cloves give the granola its warm and spicy gingerbread flavor.

An awesome recipe and guilty as charged. I love to eat this as a snack! The best part is no dishes or evidence. Just open the freezer, grab some in your hand, eat the good stuff and nobody every knows! Perfect.
