Ingredients
Dry ingredients:
3cupsold fashioned oatmeal
1cupchopped pecans
1cupchopped almonds
1/4cupbrown sugar
1/2teaspoonground cinnamon
1/2teaspoonground nutmeg
1/2teaspoonground ginger
1/4teaspoonground cloves
1teaspoonsalt
Wet ingredients:
1/3cupavocado oil
1/2cuphoney
1/4cupmolasses
2teaspoonsvanilla
Other:
3/4cupwhite chocolate chips
3/4cuplow-sugar dried cranberries
Instructions
Prep. Preheat oven to 325 degrees. Add parchment paper to a large baking sheet.
Combine dry ingredients. In a large mixing bowl, combine the oatmeal, almonds, pecans, brown sugar, salt, cinnamon, ginger, nutmeg, and cloves. Combine wet ingredients. Pour wet ingredients into a glass measuring cup (2 cups) - the avocado oil, honey, and molasses. Heat in the microwave for one minute. Add vanilla and stir again.1/3 cup avocado oil, 1/2 cup honey, 1/4 cup molasses, 2 teaspoons vanilla
Pour wet ingredients into the dry. Pour the wet ingredients into the dry and stir to combine. Add mixture to a prepared baking sheet and use a spatula to smooth to all sides of the pan.
Bake. Bake granola for 15 minutes, rotate pan and bake for another 5-10 minutes or until golden brown on top. The edges may get a little dark but watch it closely to avoid burning.
Cool. Let granola sit in the pan until cool. Then use your hands to break it up into smaller pieces.
Add Craisins and chips. Add the Craisins and white chocolate chips to the cooled granola.3/4 cup low-sugar dried cranberries, 3/4 cup white chocolate chips
Enjoy granola with yogurt, milk, fruit and yogurt, or plain by the handful!
Notes
Store granola in an airtight container or a large storage bag for about one week.
Freeze granola in a freezer bag for up to three months (or more).
