How to make Chocolate Bliss Balls:
Step 1
Prep dates. Add about two cups of hot water to the bowl of pitted dates. Let soak for about 20-30 minutes or until nice and soft.
Step 2
Chop almonds. Use a sharp knife to do a rough chop on the almonds.
Step 3
Combine dates, nuts, and chocolate chips. In a large food processor, combine the dates, chopped almonds, and mini chocolate chips. Pulse until mixture is well processed, about a minute.
Step 4
Add remaining ingredients. Add the peanut butter, cocoa powder, maple syrup, and a pinch of salt. Pulse again until everything is well combined.
Step 5
Form balls. Use your hands (or a cookie scoop) to form about 15 even-sized balls, about three tablespoons each. Roll them around to make them nice and smooth. Place chocolate energy balls on a parchment paper lined pan.
NOTE: If desired, add a few extra mini chocolate chips or chopped almonds on the surface of the balls.
Store bliss balls in an airtight container in the refrigerator for up to two weeks, or freeze for longer shelf life.
