Ingredients
16largeMedjool dates (12 oz.)- pitted and soaked
2cupsslivered almonds (8 oz.)
1/4cupmini chocolate chips
1/2cupcreamy peanut butter
1/4cupcocoa powder
2Tablespoonsmaple syrup
1/2teaspoonkosher salt
Instructions
Prep dates. Add about two cups of hot water to the bowl of pitted dates. Let soak for about 20-30 minutes or until nice and soft.
Chop almonds. Use a sharp knife to do a rough chop on the almonds.
Combine dates, nuts, and chocolate chips. In a large food processor, combine the dates, chopped almonds, and mini chocolate chips. Pulse until mixture is well processed, about a minute.16 large Medjool dates (12 oz.), 2 cups slivered almonds (8 oz.), 1/4 cup mini chocolate chips
Add remaining ingredients. Add the peanut butter, cocoa powder, maple syrup, and a pinch of salt. Pulse again until everything is well combined.1/2 cup creamy peanut butter, 1/4 cup cocoa powder, 2 Tablespoons maple syrup, 1/2 teaspoon kosher salt
Form balls. Use your hands (or a cookie scoop) to form about 15 even-sized balls, about three tablespoons each. Roll them around to make them nice and smooth. Place chocolate energy balls on a parchment paper lined pan.NOTE: If desired, add a few extra mini chocolate chips and/or almonds on the surface of the balls.
