While we enjoy a lot of Breakfast Burritos with Bacon and Mexican Breakfast Skillet on the regular, we save quiche for special occasion. After making this simple recipe, I’m wondering why I don’t make them more often.

What is a quiche?

A quiche is a custard pie, that combines a flaky pie crust with a cream, egg, and cheese mixture, plus optional ingredients like veggies, ham, and bacon. You can serve quiche warm or cold, and you can also reheat the entire quiche in the oven.

This easy quiche recipe makes a perfect breakfast, lunch, brunch, or dinner. We love eating eggs any time of day, especially when you can whip up something easy like this one. The nice thing is that you can add veggies, use different meats and cheeses, and so on.

What You’ll Need:

  • Pie Crust – I used store-bought but any homemade crust would be great too.
  • Large Eggs – We used six large eggs for this quiche.
  • Half and Half (or use heavy cream)
  • Ham – Use thick-cut ham or leftover holiday ham!
  • Gruyere Cheese – Make sure you freshly shred the gruyere cheese, for best results.
  • Kosher Salt and Freshly Ground Black Pepper
  • Green Onions – For extra flavor and color.

How to make Ham and Gruyere Quiche:

Step 1
Prep. Preheat oven to 375 degrees. Spray a pie dish with baking spray.

Step 2
Prep the crust. Press a cold pie crust (either store bought or homemade) into a prepared pie dish. Slightly crimp the edges, and trim off excess dough.

Step 3
Prep the eggs. Whip the eggs and half and half together until very well combined.

Step 4
Assemble. Add half of the ham and cheese on the unbaked crust. Then add the egg mixture and the remaining ham. Top with the rest of the cheese and green onions.

Step 5
Bake. Place the quiche in oven and bake until inside is completely set, approximately 55 minutes. Remove from oven and let it sit for about 5-6 minutes.

Step 6
Serve quiche. Serve quiche with a variety of sides.

Serve leftover ham and cheese quiche in an airtight container for 3-4 days.

How to Freeze Quiche:

  • Bake the quiche until set.
  • Cool completely.
  • Wrap tightly and place in freezer bag.
  • Freeze

How to Reheat Quiche:

  • Set frozen quiche in refrigerator until defrosted, approximately 2-3 days.
  • Preheat oven to 350 degrees.
  • Place quiche in oven for 20-25 minutes, or until heated through.
  • You may need to cover quiche with tin foil so that the top doesn’t get too brown in the oven.

How do I know when the quiche is done?

You can check for doneness by inserting a knife into the center; it should come out clean when the quiche is ready.

Should I let the quiche cool before slicing?

Yes, it’s best to let the quiche cool for about 10-15 minutes before slicing. This allows it to set and makes for easier slicing.

Notes

  1. For a richer quiche, you can use heavy cream instead of half and half.
  2. If you are into pie crust making, use a homemade crust instead of store-bought.
  3. Substitute different meats for the ham, and different types of cheese instead of gruyere.
  4. Add veggies if so desired.
  5. You can freeze this quiche after it is cooled. Wrap tightly and place in freezer bag.
  6. Once frozen, remove to refrigerator until completely thawed out. Place in 350 oven for approximately 15-20 mites to reheat.
