Ingredients
For the fries:
3largesweet potatoes- or about 2 1/4 pounds
3Tablespoonsolive oil
2 ½Tablespoonscorn starch
2teaspoonchili powder
1teaspoongarlic powder
1teaspoonpaprika
½teaspooncayenne- or to taste
kosher salt - to taste
Instructions
Slice the sweet potatoes. Peel your potatoes, and cut them into thin strips. (We love thin fries!) Add them to a large bowl.3 large sweet potatoes
Coat with olive oil. Drizzle the olive oil over the sweet potatoes and mix well.3 Tablespoons olive oil
Add cornstarch. Add the cornstarch and use your hands to rub it into the potatoes. This is the key ingredient to get CRISPY baked fries!2 ½ Tablespoons corn starch
Add seasonings. Combine the seasonings in a small bowl – chili powder, garlic powder, paprika, and cayenne. Sprinkle the seasonings overtop the potatoes and mix well to combine.2 teaspoon chili powder, 1 teaspoon garlic powder, 1 teaspoon paprika, ½ teaspoon cayenne
Prep for baking. For this recipe, you’ll need two baking sheets. Spread them with parchment paper and arrange them in rows on your pans. Make sure they aren’t overlapping!
Bake sweet potato fries. Bake at 425 degrees for 15 minutes, and then flip them, and bake for another 15 minutes. If you don’t have a second oven, just rotate each baking sheet on two racks in your oven. You may need a little more time if rotating them, or if your oven runs cool. They should be golden brown on top and fork-tender.
Then, AFTER baking, add the salt. After removing the fries, add plenty of salt. Adding salt sooner will draw out the moisture, and you won’t get that crisp sweet potato fry.kosher salt
