Turkey Taco Skillet is a quick and flavorful one-pan dish combining seasoned ground turkey, sautéed vegetables, frozen corn, black beans, and melted cheese - perfect for taco Tuesday. Serve this turkey skillet meal over rice or with chips for a complete Tex-Mex meal!
2Tablespoonstaco seasoning- use my homemade recipe or store-bought
Other:
1 1/2cupsfrozen corn- or fresh (about 3 ears)
15oz.black beans- rinsed and drained
15oz.fire-roasted diced tomatoes
6oz.freshly shredded cheddar cheese
cilantro, avocado slices, tortilla strips, rice- to serve
Instructions
Sauté the meat. Heat a large cast iron skillet over medium-high heat. Add olive oil, ground turkey, onion, jalapeño, and bell peppers - and cook until turkey is cooked through, about 10 minutes. Add taco seasoning and cook another couple of minutes.1 Tablespoon olive oil, 1 pound ground turkey, 1/2 large yellow onion, 1 large jalapeno, 1 medium bell pepper (any color), 2 Tablespoons taco seasoning
Add remaining ingredients. Add the frozen corn, black beans, and diced tomatoes. Stir well and simmer mixture for another 5-6 minutes, or until hot and bubbly.1 1/2 cups frozen corn, 15 oz. black beans, 15 oz. fire-roasted diced tomatoes
Add cheese. Reduce heat and sprinkle the shredded cheese on top of the turkey mixture. Let melt, and then remove the skillet from heat.6 oz. freshly shredded cheddar cheese
