Ingredients
For the marinated tomatoes:
6oz.cherry tomatoes- halved
2Tablespoonsolive oil
1Tablespoonbalsamic vinegar
1clovegarlic- finely grated
2teaspoonslemon juice- freshly squeezed
1/2teaspoonsItalian Seasoning
kosher salt and freshly ground black pepper- to taste
For the cheese:
8oz.feta cheese
4oz.cream cheese
1Tablespoonolive oil
To serve:
1/4cupcucumbers- diced
toasted bread, pita chips and/or fresh veggies
Instructions
Prep tomatoes. Slice the cherry tomatoes in half. If using larger tomatoes (like heirloom or Compari), slice in bite-sized pieces. Add to a medium bowl.6 oz. cherry tomatoes
Make marinade. In a small bowl, combine the olive oil, balsamic vinegar, freshly squeezed lemon juice, grated garlic, and seasonings (Italian Seasoning, kosher salt, and freshly ground black pepper).2 Tablespoons olive oil, 1 Tablespoon balsamic vinegar, 2 teaspoons lemon juice, 1 clove garlic, 1/2 teaspoons Italian Seasoning, kosher salt and freshly ground black pepper
Let tomatoes marinate. Pour the marinade over the tomatoes and stir. Let the tomatoes sit for approximately one hour so the flavors meld together.
Whip feta and cream cheese. In a small food processor, add the feta cheese, cream cheese, olive oil, and some freshly ground black pepper (to taste). Pulse until creamy. Use a spatula to add this to a serving bowl. Use a spoon to spread it, pushing most of it to the edges of the bowl.8 oz. feta cheese, 4 oz. cream cheese, 1 Tablespoon olive oil
Assemble dip. Pour the marinated tomatoes over the whipped feta and stir slightly. Add the diced cucumbers.1/4 cup cucumbers

Notes
If you need extra olive oil to make the whipped feta extra creamy, add it a little bit at a time.
The tomatoes need about an hour to marinate. Keep them at room temperature if at all possible.
I recommend using fresh garlic in this recipe, not the powdered version.
