Ingredients
For the sweet potatoes:
8cupssweet potatoes- chopped
2-3Tablespoonsolive oil
kosher salt and freshly ground black pepper- to taste
For the meat mixture:
1Tablespoonolive oil
2poundsground turkey- or lean ground beef
1/2mediumonion- chopped
1mediumjalapeno- diced
3clovesgarlic- minced
3Tablespoonstaco seasoning- use homemade version
For the cilantro lime dressing:
3/4cupplain Greek yogurt
1/4cuplight mayo (with olive oil)
3Tablespoonsextra-virgin olive oil
1/3cupcilantro
1largelime- freshly squeezed
1/4teaspoonEACH garlic powder, onion powder
kosher salt and freshly ground black pepper- to taste
Prep sweet potatoes. Peel and chop sweet potatoes. Place on a large baking sheet (or two if needed) lined with parchment paper and drizzle with olive oil, salt, and pepper.8 cups sweet potatoes, 2-3 Tablespoons olive oil, kosher salt and freshly ground black pepper
Roast potatoes. Preheat oven to 400 degrees. Add sweet potatoes and roast until fork tender, about 20-25 minutes. Remove and set aside.
Cook meat mixture. Heat a large skillet over medium-high heat. Add ground turkey, onions, and jalapeños and cook until meat is cooked through. Then add the seasonings and garlic – and cook for another 1-2 minutes. Make cilantro lime dressing. Combine all ingredients (Greek yogurt, mayo, olive oil, cilantro, freshly squeezed lime juice, sugar, and seasonings) in a small food processor and blend until creamy.
