Ingredients
For the potatoes:
1mediumrusset potato- sliced into wedges
2mediumsweet potatoes- sliced into wedges
1mediumonion
1/4cupolive oil
1teaspoononion powder
1teaspoonpaprika
1/4teaspooncayenne pepper- or more
kosher salt and freshly ground black pepper- to taste
6clovesgarlic- minced
For the meat:
1Tablespoonsolive oil
1/2cuponion- diced
1/2cupbell pepper (any color)- diced
1poundlean ground beef

1/2cupketchup
2Tablespoonsyellow mustard
2Tablespoonstomato paste
2Tablespoonsapple cider vinegar
2Tablespoonsbrown sugar

Instructions
Prep potatoes and onions. Wash potatoes, and slice in short wedges. Slice the onions into rings. Place potatoes and onions in a mixing bowl.1 medium russet potato, 2 medium sweet potatoes, 1 medium onion
Add oil and seasonings. Drizzle the olive oil over the potatoes and onions and mix well. Add the seasonings and stir again. Arrange all on a baking sheet lined with parchment paper.1/4 cup olive oil, 1 teaspoon onion powder, 1 teaspoon paprika, 1/4 teaspoon cayenne pepper, kosher salt and freshly ground black pepper
Bake potatoes. Bake potatoes in a 425-degree preheated oven for 15 minutes. Remove pan and gently flip the potatoes. Add the minced garlic to the potatoes and bake again until fork tender, approximately 15 minutes.6 cloves garlic
Brown beef. Meanwhile, heat a large cast iron skillet over medium heat. Add olive oil and add diced onions, bell peppers, ground beef, kosher salt, and freshly ground black pepper. Cook until the beef is browned and cooked through, using a spatula to break up the beef. Add ingredients to beef. Then add the yellow mustard, ketchup, tomato paste, apple cider vinegar, and brown sugar. Stir well and reduce heat to a simmer. Notes
Instead of a combo of roasted sweet potatoes and russet potatoes, you could try some mashed potatoes, cauliflower rice, or quinoa.
