12oz.ricotta cheese
4oz.mozzarella cheese- freshly shredded
1oz.parmesan cheese- freshly shredded

Instructions
Make the pizza dough. We think our homemade pizza dough recipe is simple enough for anyone to make it. However, you can purchase dough at a pizza shop or the grocery store too.Our homemade dough makes enough for three pizzas.1 medium pizza dough
Combine cheese. In a small mixing bowl, combine the ricotta, shredded mozzarella, and shredded parmesan cheese. Add a drizzle of olive oil and a sprinkle of kosher salt and freshly ground black pepper (to taste). Assemble pizza. Roll out the pizza dough on a floured surface. We like ours fairly thin. Transfer the dough to a greased cast iron skillet or pizza stone. Then add a drizzle of olive oil and brush over top.Spread the three cheese mixture over the dough, spreading it to all sides of the pan. Add a little extra salt and pepper.
Bake pizza. Bake the cheese pizza in a preheated 500-degree oven until the crust is browned and the cheese is bubbly on top.NOTE: We occasionally like to grill our pizza on our Big Green Egg. It's a fun family activity plus the grill adds smokiness. It's so delish!
Serve. Serve pizza with a side salad and a glass of wine or fun cocktail.
Notes
You can make the dough several hours in advance and store it in the refrigerator. About an hour before using, remove it and let it come to room temperature before rolling out.
You can add tomato sauce or pesto sauce to the cheese pizza, but we like it without.
Storing – Store leftover pizza (with toppings) in the refrigerator for up to three days.
Freezing – You can freeze the baked pizza for a month or so (tightly wrapped). Just thaw and reheat in the microwave.
