Ingredients
For the apples:
1Tablespoonunsalted butter
2 ½cupsdiced apples- peeled, cored, and diced
1Tablespoonwater
1-2Tablespoonsbrown sugar
1/2teaspooncinnamon
For the graham cracker crust:
1/2cupgraham cracker crumbs
2teaspoonssugar
2Tablespoonsunsalted butter- melted
For the cream cheese layer:
6oz.cream cheese light
1/2cupheavy cream
2Tablespoonspowdered sugar
2teaspoonsvanilla
pinch of salt
Other:
1/4cupcaramel topping- or more
Instructions
REGARDING CARAMEL SAUCE: You can either use store-bought caramel sauce or make our Homemade Salted Caramel Sauce. For best results, make our homemade version ahead of time to use in this recipe (and others).
Cook the apples. Add the diced apples, butter, water, brown sugar, and cinnamon to a small saucepan. Cook over medium heat until softened, about 5-6 minutes. Remove to cool.2 ½ cups diced apples, 1 Tablespoon unsalted butter, 1 Tablespoon water, 1-2 Tablespoons brown sugar, 1/2 teaspoon cinnamon
Make the graham cracker crust. Use a food processor to crush the graham crackers into crumbs. Pour the crumbs into a bowl and add sugar and melted butter. Stir to combine and then spoon into the four jars, adding about the same amount to each jar. Then, press the crumbs tightly with a round object (I used the end of an ice cream scoop.).1/2 cup graham cracker crumbs, 2 teaspoons sugar, 2 Tablespoons unsalted butter
Prep the cream cheese layer. In a mixing bowl, use a hand mixer to whip the heavy cream to stiff peaks. Then in another bowl, add the softened cream cheese, powdered sugar, vanilla, and salt. Blend with the mixer, and then fold in the heavy whipping cream.1/2 cup heavy cream, 6 oz. cream cheese light, 2 Tablespoons powdered sugar, 2 teaspoons vanilla, pinch of salt
Add to jars. Spoon the cream cheese mixture into the jars on top of the graham cracker crust. Smooth evenly to all sides of the jars.
Finish assembling jars. When apples are cooled (room temp is fine), add softened apples to the jars. Drizzle with the caramel sauce and serve.1/4 cup caramel topping
Notes
Prep Ahead: You can prep the layers a day in advance. Wait to assemble the mini apple pies on the day of serving.
Storing: You can store these jars (with lids on) in your refrigerator. These are best served on the day of preparation.
Jars: Instead of preparing these in 8 oz. jars, you could make them even smaller and use 4 oz. jars. These would be perfect for a party where you have multiple desserts available.
