Kielbasa and Sauerkraut is an easy one skillet meal that combines spicy sausage, buttery yellow potatoes, and briny sauerkraut. This Polish inspired recipe is the tastiest weeknight meal and your family will love it!

Ingredients
1poundsausage
2Tablespoonsolive oil
1/2mediumonion
2clovesgarlic- minced
1 ½poundyellow potatoes- chopped
3-4cupssauerkraut
1teaspoononion powder
kosher salt and freshly ground black pepper- to taste
Instructions
Cook potatoes. Add potatoes to a stock pot and cover with water. Bring to a boil, add plenty of salt, and reduce heat to a simmer. Cook until fork tender. Strain potatoes and set aside to cool slightly. Chop when they are cool enough to handle.1 ½ pound yellow potatoes
Brown the sausage. Slice the sausage at an angle. Heat skillet to medium-high heat and brown on both sides.1 pound sausage
Add onions. Add a tablespoon of avocado oil and then add the onions, stirring to soften. Add garlic and stir for another minute. Remove mixture to a separate bowl.2 Tablespoons olive oil, 1/2 medium onion, 2 cloves garlic
Add potatoes. Drizzle remaining olive oil to skillet. Then add potatoes and seasonings, and cook to brown – stirring occasionally.1 teaspoon onion powder, kosher salt and freshly ground black pepper
Add sauerkraut. Then add the sauerkraut (and the sausage and onions back in) and stir. Cook until heated through.3-4 cups sauerkraut

Notes
The word kielbasa (keel-bah-sah) is Polish for sausage. It includes many types of smoked, fresh, or cured meats, and is generally inexpensive.
Some people rinse sauerkraut to remove some of the sodium content of the sauerkraut. However, it also removes much of the flavor, which is why I personally don’t rinse it.
