Ingredients
2 1/2cupslong-grain rice- either white or brown
3 1/2cupslower sodium chicken broth
3/4 - 1cupcilantro- chopped
2medium limes- freshly squeezed
kosher salt and freshly ground black pepper- to taste
Instructions
Rinse rice in cold water. Combine the rice and chicken broth in the instant pot. Set instant pot to "pressure cook", and set time to 4 minutes. Seal the vent to close, and let the instant pot build up pressure.2 1/2 cups long-grain rice, 3 1/2 cups lower sodium chicken broth
After the 4 minutes are up, let the instant pot do a natural release for 5 minutes. Then do a quick release by opening the vent.
Remove the lid from the instant pot. Use a fork to fluff the rice, and then add chopped cilantro and the fresh lime juice. Season with salt and pepper to taste, and serve.3/4 - 1 cup cilantro, 2 medium limes, kosher salt and freshly ground black pepper
Notes
You can store this rice in the refrigerator for several days. Just microwave it with your favorite protein.
