Ingredients
1poundground beef
1poundground pork
2largeeggs
3clovesgarlic- minced
1/3cuponion- minced
1/3cupshredded parmesan cheese- freshly shredded
2/3cupItalian breadcrumbs
1teaspoonred pepper flakes
kosher salt and freshly ground black pepper- to taste
1/2cupcold water
Instructions
Preheat oven. Preheat oven to 375 degrees.
Mince veggies. Mince your onion and garlic very finely. Your picky eaters won't notice them but WILL notice the amazing flavor they provide.
Combine ingredients. In a large mixing bowl, combine the meatball ingredients - ground beef, ground pork, onions, garlic, eggs, parmesan cheese, Italian breadcrumbs, and seasonings.1 pound ground beef, 1 pound ground pork, 1/3 cup onion, 3 cloves garlic, 2 large eggs, 1/3 cup shredded parmesan cheese, 2/3 cup Italian breadcrumbs, 1 teaspoon red pepper flakes, kosher salt and freshly ground black pepper
Mix ingredients. Use your hands to gently mix everything together. Add cold water to moisten. Try not to over-work the meat or they will become tough.1/2 cup cold water
Form meatballs. Use a large cookie scoop to form meatballs. Place on a baking sheet lined with parchment paper.
Brown meatballs. Use a large cast iron skillet to brown the meatballs on all sides. Add a little bit of neutral oil to the pan and brown on medium-high heat.
Bake. Transfer meatballs to a large parchment paper lined baking sheet. Bake for approximately 10 minutes or until done to your liking.

Notes
Store leftover meatballs in an airtight container in your refrigerator for 3-4 days.
Freeze uncooked meatballs or cooked meatballs wrapped tightly in plastic wrap and then place in a freezer bag or freezer-safe container.
