1poundground lamb
1largeegg
1/4cupred onion- minced
2clovesgarlic- minced
1Tablespoonfresh dill- minced
1/3cupfeta cheese- crumbled
1/4cupPanko breadcrumbs
kosher salt and freshly ground black pepper- to taste
1-2Tablespoonscold water- as needed
Instructions
Preheat oven. Preheat oven to 400 degrees.
Combine ingredients. In a medium bowl, combine the ingredients – ground lamb, red onion, garlic, dill, bread crumbs, egg, feta cheese, salt, and pepper.1 pound ground lamb, 1/4 cup red onion, 2 cloves garlic, 1 Tablespoon fresh dill, 1/4 cup Panko breadcrumbs, 1 large egg, 1/3 cup feta cheese, kosher salt and freshly ground black pepper
Mix ingredients. Use your hands to combine the meatball ingredients. Don’t over-handle. Add 1-2 tablespoons of cold water to add moisture so that the meat mixture is easy to handle.1-2 Tablespoons cold water
Form meatballs. Then use a cookie scoop to form about 12 even-shaped meatballs (approximately the size of a golf ball). Place in a single layer on a pan lined with parchment paper. Drizzle a bit of olive oil over the top.
Bake. Bake the meatballs in a preheated oven for 18-20 minutes or until golden brown and cooked through (until the lamb reaches an internal temperature of 160 degrees).
