4-6oz.deli turkey

Instructions
Make pesto mayo. Follow my simple recipe for pesto mayo and keep it on hand for all of your sandwich cravings. Simply mix 3/4 cup of mayonnaise with three tablespoons of pesto, plus a squeeze of fresh lemon juice. Stir and keep handy in your refrigerator.
Make bacon. We normally cook bacon in the oven. Line a baking sheet with aluminum foil and add a wire rack on top. Then arrange bacon on rack and cook at 400 degrees until done to your liking.
Assemble sandwiches. Lightly toast bread. Top with pesto mayo, crispy bacon, turkey slices, tomato and lettuce (and maybe some spicy pickled onions).4 slices soft white sandwich bread, 4-6 Tablespoons pesto mayo, 4 slices bacon, 4-6 oz. deli turkey, tomato slices, lettuce
Serve. Serve club sandwiches with your choice of side dishes.
Notes
Classic club sandwiches are often made with toasted white bread, but wheat, sourdough, or ciabatta also work well. We use our soft white sandwich bread recipe.
You can prep ingredients in advance, but for the best texture, assemble the sandwich just before serving to keep the bread from getting soggy.
