Ingredients
15oz.fire-roasted tomatoes- or use fresh tomatoes
1/2largejalapeño- cut in chunks
1/4cupred onion- cut in chunks
1clovegarlic- peeled
1/3cupcilantro- loosely packed and roughly chopped
1/2largelime- freshly squeezed
kosher salt and freshly ground black pepper- to taste
Instructions
Add ingredients to blender. To a large blender (or food processor), add salsa ingredients - tomatoes, onion, jalapeño, garlic, cilantro, lime juice, and seasonings. Give the veggies a rough chop before adding to the food processor.15 oz. fire-roasted tomatoes, 1/4 cup red onion, 1/2 large jalapeño, 1 clove garlic, 1/3 cup cilantro, 1/2 large lime, kosher salt and freshly ground black pepper
Blend. Blend ingredients by pulsing for just a few seconds at a time. Don't over-blend because you're going to want some texture to remain.
Add salsa to jars. Pour the salsa into mason jars or a large airtight container.
Store. Store salsa in the refrigerator until ready to serve.
Notes
Instead of canned tomatoes, you can use fresh tomatoes - especially if you have access to a garden.
To adjust the spice level, add or subtract jalapeños and add red pepper flakes/cayenne pepper for even more heat.
You can grill or roast fresh veggies to add smokiness to the salsa. This will add time to the process, however.
