Bacon Wrapped Jalapeño Poppers are the perfect game day or party appetizer. Quick and easy, these poppers combine deseeded jalapeños, a creamy filling, and thinly sliced bacon. Leave a few seeds for a spicy kick!
Prep. Preheat oven to 425 degrees F. Cover a baking sheet with some aluminum foil and place a wire rack on top.
Prep the jalapeños (using gloves!). Clean and halve them. Remove seeds if desired. (We keep the seeds!)10 fresh jalapenos
Make filling. To a medium bowl, combine the cream cheese, cheddar cheese, garlic powder, kosher salt, and freshly ground black pepper. Use a hand mixer to blend until creamy.8 ounces light cream cheese, 1 cup sharp cheddar cheese, 1/2 teaspoon garlic powder, kosher salt, 1/2 teaspoon black pepper
Fill peppers and wrap. Spoon the filling into the halved jalapeños. Wrap a slice of bacon around each pepper half and secure with a toothpick. Place poppers on the prepared baking tray.1 pound thinly sliced bacon, 20 toothpicks
Bake. If using raw bacon, bake the jalapeño poppers in the preheated oven for 25 minutes, or until the bacon is crisp to your liking. If using par-cooked bacon, you’ll only need about 10-15 minutes in the oven.
Serve. Serve these hot or at room temperature. The best part is EATING them!

Notes
A note on the bacon. I often par-cook the bacon to ensure that these are crispy. If par-cooking, I recommend baking it and watching closely to avoid over-cooking. You want the bacon to still be pliable enough to wrap around the stuffed jalapeños.
Some jalapeños are hotter than others. Beware!
Always use gloves when handling the insides of jalapeños.
