Baked Garlic Home Fries are a go-to side dish for dinner, or even an appetizer for game day. These are perfectly seasoned with olive oil, minced garlic, and a delicious blend of spices. Super easy to make, delicious, and healthy too!

Ingredients
3mediumrusset potatoes- sliced into fries
1/4cupolive oil
6-7clovesgarlic- minced
1teaspoononion powder
1teaspoonpaprika
1/4teaspooncayenne pepper- or more
kosher salt and freshly ground black pepper- to taste
chopped cilantro- to serve
Instructions
Preheat oven to 425 degrees. Prep a baking sheet with parchment paper.
Prep potatoes. Wash the russet potatoes. Slice them in half the long way, and then slice each half into several thin wedges (the long way). Try to slice wedges in equal sizes so baking will be consistent.
Place the potato wedges in a mixing bowl. Drizzle the olive oil over the potatoes, and then sprinkle with the minced garlic and remaining seasonings. Mix well with your hands, and then arrange on the prepared baking sheet, making sure the fries aren't touching.
Bake for approximately 15 minutes, and then carefully flip them. Then sprinkle the minced garlic over the top.
Bake another 10-15 minutes, or until they are fork tender. Remove from oven.
Check seasonings, and adjust as needed. Sprinkle minced cilantro over top the fries, and serve with ketchup, mayo, or my Skinny Chipotle Ranch Dressing.
Notes
To remove some of the starch, soak the raw potato wedges in cold water before baking. Make sure you dry them off before baking.
These fries are best served immediately.
You can reheat leftover fries by baking in the oven (again) for a few minutes, pan-frying in some olive oil in a cast iron skillet, or reheat in your air fryer.
