Strawberry Daiquiri Mocktails are a classic summer party drink sans the rum. These combine frozen strawberries, freshly squeezed limes, honey simple syrup, and tonic water - all blended up and served in fancy glasses with a strawberry and lime garnish. Super refreshing and perfect for adults and kids alike!
1/3cuptonic water- or use Sprite or 7UP for a sweeter flavor
cold water to thin- if needed
fresh strawberries and lime slices- for garnish
Instructions
Prepare simple syrup. In advance, prepare the honey simple syrup. Combine equal parts water and honey in a saucepan and bring to boil, stirring constantly. Reduce heat and let simmer for about 7-8 minutes. Pour into a mason jar and let cool. Refrigerate.
Squeeze enough fresh limes to get about 2/3 cup of juice.
Combine all ingredients in a blender - the frozen strawberries, honey simple syrup, fresh lime juice, and tonic water. Blend until smooth.5 cups frozen strawberries, 1/3 cup honey simple syrup, 2/3 cup lime juice, 1/3 cup tonic water
If the mixture is too thick and won't blend, add a little bit of cold water until it blends well.cold water to thin

Be sure to prepare the honey simple syrup in advance. you want it to be nice and chilled before blending.
You could also make a regular simple syrup (in place of the honey simple syrup). Use equal parts sugar and water and simmer until the sugar is dissolved. Refrigerate.
To turn a strawberry daiquiri mocktail into a cocktail, simply replace the tonic water with white rum. We prefer Bacardi, but any version will do as long as you stay away from the super cheap stuff.
