Ingredients
1 ½cupslong-grain brown rice
2cupslower-sodium chicken broth (or water)- more if cooking on stove top
2Tablespoonsolive oil
20oz.turkey sausage- or other sausage
1mediumyellow onion- chopped
4stalkscelery- chopped
16oz.sliced mushrooms
3clovesgarlic- minced
kosher salt and freshly ground black pepper- to taste
a pinch of red pepper flakes- optional
Instructions
Brown sausage. Remove sausage from casings. In a stock pot, cook the turkey sausage until done. Remove to a bowl.20 oz. turkey sausage
Sauté onions and celery. Add some olive oil to the stock pot and cook the chopped onion and celery for a few minutes. Add seasonings.2 Tablespoons olive oil, 1 medium yellow onion, 4 stalks celery
Add mushrooms and garlic. Then add the sliced mushrooms and cook for another 6-7 minutes, or until veggies are soft and liquids absorb. Add garlic, salt, and pepper at the end of the cooking and stir well.16 oz. sliced mushrooms, 3 cloves garlic, kosher salt and freshly ground black pepper
Make brown rice. Cook the rice in an instant pot or on the stove top (according to package directions).1 ½ cups long-grain brown rice, 2 cups lower-sodium chicken broth (or water)
Combine dressing ingredients. To the veggies, add the cooked sausage and brown rice and stir well.
Serve. Serve the rice dressing with a pinch of red pepper flakes and chopped cilantro.a pinch of red pepper flakes
Notes
If using the instant pot to cook the rice, combine rice and chicken broth and cook on high pressure for 8 minutes. Do a natural release for about 8 minutes and release vent. Stir rice.
