Ingredients
2wholecucumbers- sliced thin
1/4cupred onions- sliced thin
3Tablespoonsplain Greek yogurt
2Tablespoonshoney
3Tablespoonsapple cider vinegar
1teaspooncelery seed
salt and pepper- to taste
Instructions
Using a mandolin (or a sharp knive), slice cucumbers into very thin slices. add to medium sized bowl.
Slice red onions, and combine with cucumbers.
Mix dressing by combining the Greek yogurt, honey, vinegar, celery seed, and salt and pepper. Mix well, and pour over cucumbers.
Place in shallow dish and let marinate (for at least an hour), so that the cucumbers absorb the flavors from the dressing.
