Peanut Butter Chocolate Granola combines old fashioned oats, peanuts, sunflower seeds, and pumpkin seeds - all topped with a delicious peanut butter and honey mixture. Add some peanut butter and chocolate chips for good measure!
Combine the dry ingredients. In a large bowl, combine the dry ingredients – the oatmeal, peanuts, sunflower seeds, pepitas, and sea salt. Stir well to combine.3 cups old fashioned oats, 1 cup peanuts, 1/2 cup sunflower seeds, 1/2 cup pepitas, 1 teaspoon sea salt
Combine the wet ingredients. In a 2-cup measuring cup, combine the wet ingredients – the avocado oil, honey, maple syrup, and crunchy peanut butter. Heat in the microwave for about two minutes and then stir well to combine.1/3 cup avocado oil, 1/4 cup honey, 1/4 cup pure maple syrup, 1/2 cup crunchy peanut butter
Pour the wet ingredients over the dry. Pour the honey peanut butter mixture over the dry ingredients and stir well with a spoon.
Add to pan. Then add the granola mixture to a sheet pan lined with parchment paper and spread evenly to all sides of the pan.
Bake granola. Bake the granola in a preheated 325-degree oven for 20 minutes. Check to see if the granola is browning. You may need to bake the granola for another 5-8 minutes or so.
Let cool. Let the pan of granola sit in the pan for 20-30 minutes. Afterward, use your hands to break up the granola into chunks.

STORE peanut butter granola in a storage bag or an airtight container. This will stay fresh on your countertop for about one week.FREEZE granola in a freezer bag for up to three months.
Notes
Be vigilant and stay close to the oven towards the end of baking. This granola can burn very quickly, and I don’t want that to happen to you.
Don't stir the granola to keep the granola in large clusters. After it's done, remove the pan from the oven and let it sit for about 15 minutes before using your hands to break it apart.
