Ingredients
Wet Ingredients:
1/2cupunsalted butter- softened to room temperature
1/2cupbrown sugar (110 grams)
1/2cupgranulated sugar (100 grams)
1/2cupcreamy peanut butter
1largeegg- at room temperature
1teaspoonvanilla extract
Dry Ingredients:
1 ½cupsall-purpose flour (180 grams)
1/2teaspoonkosher salt
1/2teaspoonbaking soda
1/2teaspoonbaking powder
24dark chocolate melting wafers- Ghirardelli
1/2cupdark chocolate chips- or enough to add the full prints!
Instructions
Combine wet ingredients. In the bowl of a large standing mixer (using a paddle attachment), combine softened butter and both sugars. Mix until creamy. Then add the egg, vanilla extract, and peanut butter and mix again until well combined.1/2 cup unsalted butter, 1/2 cup brown sugar (110 grams), 1/2 cup granulated sugar (100 grams), 1 large egg, 1 teaspoon vanilla extract, 1/2 cup creamy peanut butter
Add dry ingredients. Add the flour, kosher salt, baking powder, and baking soda - and combine until flour is just absorbed.1 ½ cups all-purpose flour (180 grams), 1/2 teaspoon kosher salt, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda
Form cookie balls. Use a small cookie scoop or a tablespoon to form 24 equal cookie balls. Roll with your hands.
Chill. Place pan in the refrigerator for two hours to chill. You can also refrigerate overnight.
Prep oven and pan. Preheat oven to 350 degrees. Add parchment paper to a large sheet pan.
Bake. Place eight small cookie balls on the prepared pan. Bake cookies for 9-10 minutes.
Add chocolate. Remove pan from the oven and lightly press a melting wafer into one side of each cookie. Then add four dark chocolate chips for the claws into each cookie. Return pan to the oven and bake for 3-4 additional minutes, or until slightly browned.Repeat for remaining cookies.24 dark chocolate melting wafers, 1/2 cup dark chocolate chips
Cool. Remove cookies from oven and add a sprinkle of sea salt. Let the cookies rest on the pan for five minutes before transferring to a cooling rack.
Notes
Store paw print cookies in an airtight container at room temperature for 3-4 days. You'll be able to stack them after the chocolate dries.
You can freeze the cookie balls or the baked cookies for up to three months.
