Ingredients
1poundstrawberries- hulled
8oz.cream cheese- softened
2Tablespoonssour cream
1teaspoonvanilla extract
1cuppowdered sugar
1-2Tablespoonsheavy cream
mini chocolate chips- optional
graham crackers- optional
Instructions
Prep the strawberries. Rinse the strawberries in cold water and pat dry with a paper towel. Use a sharp knife to hull the strawberries. Then take the bottom tip off so it sits flat on a plate or platter.1 pound strawberries
Make the filling. In a medium mixing bowl, combine the softened cream cheese, sour cream, vanilla, powdered sugar, and heavy cream. Use a hand mixer to mix until creamy. Then add to a piping bag with your choice of tip.8 oz. cream cheese, 2 Tablespoons sour cream, 1 teaspoon vanilla extract, 1 cup powdered sugar, 1-2 Tablespoons heavy cream
Pipe filling. Squeeze the piping bag to fill each strawberry and pile it up on top. If you have extra filling, just add more strawberries!
Add toppings. If desired, add a few mini chocolate chips or crushed graham crackers to the top of the filling. You can also add other toppings of your choice!mini chocolate chips, graham crackers
Serve. Serve the strawberries on a pretty plate with or without toppings.
Store. Store the strawberries in the refrigerator until ready to serve. Best served the first day, but they’ll stay pretty fresh for an extra day or so.
Notes
Pat dry the strawberries. As mentioned above, you’ll want to use paper towel to pat them dry. They’ll stay fresh longer in the fridge PLUS they’ll look better too!
Sift the powdered sugar. I ALWAYS sift my powdered sugar to avoid those annoying clumps.
Use a piping tip/bag. Using a piping kit will add a presentation factor that you’re going to want. Plus it’s much easier to use rather than a spoon.
Have extra strawberries on hand. You may have more filling than you can use on one pound of berries. So have some extra just in case!
Make the cheesecake bites the day of your gathering (for best results). I don’t recommend making these too far in advance. You can, however, make the filling the day before and pipe them shortly before serving.
