1store-bought pie crust
3mediumpeaches- sliced thin
2teaspoonsvanilla
1/3cupsugar
1/2teaspooncinnamon
2Tablespoonscornstarch
a big squeeze of lemon juice

Instructions
Slice peaches thinly (skins on). Place in a mixing bowl, and add vanilla, sugar, cinnamon, cornstarch, and a squeeze of lemon juice. Roll out a pie crust. Add peaches (without the extra juices) to the middle of the crust, leaving about an inch from the edges. Fold the outer edges of the crust into the center, slightly overlapping the others. Make sure all the peaches stay inside the crust.1 store-bought pie crust
Brush an egg wash on top of the crust that is folded inward. Sprinkle with some sparkling sugar, if desired.egg wash
Bake at 375 degrees for approximately 35-40 minutes, or until the crust is nice and golden brown, and the peaches are bubbling hot.
