Christmas Tree Chocolate Covered Ritz Pops are simple no bake treats that the whole family will love. These combine ritz crackers, creamy peanut butter, dark chocolate, and white chocolate - and can be decorated for your holidays or special occasions!
Place several ritz crackers on a baking sheet lined with parchment paper. Spread about two teaspoons (or more) of creamy peanut butter to each cracker. Then place a lollipop stick on the peanut butter and add a little more peanut butter to the exposed lollipop stick.30 ritz crackers, 1/2 cup creamy peanut butter, lollipop sticks
Place a second ritz cracker on top the peanut butter and press down carefully (to form a “sandwich”).
In a small bowl, add the chocolate melting wafers and microwave at 50% power (in 30 second increments) until creamy. Don’t over-cook!6 oz. dark chocolate melting wafers
Dip each pop into the dark chocolate, using a spoon to scrape off a little chocolate and smoothing to cover well. Set each pop on the baking sheet and then immediately add sparkling sugar to the top of the chocolate.
Let the chocolate set up until its firm.
In a small bowl, add the white chocolate and microwave at 50% power until creamy. Then add some green food coloring and stir well. Place a small bag inside a jar and then spoon the green colored white chocolate into the bag. Use a clip to the bag and snip off a small corner of the bag.2 oz. white chocolate melting wafers
Use your hand and to squeeze the bag to gently draw on a Christmas tree (or other decoration of your choice). Immediately add a small sugar pearl sprinkle to the top of the tree and some other sprinkles to the tree itself.The chocolate sets up super fast so make sure you add the sprinkles quickly.miscellaneous sprinkles
Let the pops sit for 10-15 minutes, or until the chocolate fully sets.
Notes
STORE the cookie pops in an airtight container in the refrigerator for several weeks. These are also ok stored at room temperature in a cool house.
FREEZE the Chocolate Covered Ritz Pops in an airtight container for up to 3-4 months.
