Ingredients
dry ingredients:
2 ¼cupsall-purpose flour
2Tablespoonssugar
1teaspoonbaking soda
1teaspoonbaking powder
1/2teaspoonsalt
wet ingredients:
2large eggs
2teaspoonsvanilla
2cupsbuttermilk
1/2cupunsalted butter- melted and cooled slightly
3/4cupshredded cheddar cheese
3/4cupbacon- cooked and diced
eggs cooked over easy- for serving
maple syrup- for serving
Instructions
Cook the bacon. You can use the skillet, microwave, or the oven to cook it. I prefer cooking a whole package of bacon in the oven using a wire rack on a baking sheet.

To the bowl, add the eggs, buttermilk, vanilla, and melted and cooled butter. Mix with a large spoon. Be careful to not over-mix. Some small clumps of flour are ok. Then add the cooked and crumbled bacon and shredded cheddar cheese. Prepare a waffle iron. When hot, add batter and cook until done. You should get approximately 12 waffles.

Storing - These can be stored in the refrigerator for several days. Simply warm them up in the microwave or use toaster to get them a little crunchyFreezing - I'm always looking for meals that are freezer friendly for a grab-and-go meal. Waffles freeze up great, and I've been doing that for years. You just place them in freezer bags, separated by parchment paper, and freeze up to three months. Grab one on your way out the door, or eat them at home with a freshly cooked egg on top.
