Applesauce Cinnamon Muffins are a healthier muffin, using cinnamon applesauce to add extra moisture and flavor. These also contain two cups of diced apples and a big dash of cinnamon that will make your house smell like fall, and you'll be coming back for more!

Ingredients
For the muffins:
1/2cupunsalted butter- melted and slightly cooled
1cupbrown sugar
2teaspoonsvanilla
1 1/2cupscinnamon applesauce- or use unsweetened
2largeeggs
1 1/2teaspoonsbaking soda
1/2teaspoonbaking powder
1teaspoonkosher salt
1 ½teaspoonscinnamon
2cupsall-purpose flour
2cupsapples (use baking apples)- peeled and finely diced
an extra sprinkle of cinnamon on top
Instructions
Preheat oven to 350 degrees. Prepare a 12-cup muffin tin with liners.
Mix wet ingredients. In a mixing bowl, combine the wet ingredients – the melted butter, brown sugar, vanilla, cinnamon applesauce, and eggs.1/2 cup unsalted butter, 1 cup brown sugar, 2 teaspoons vanilla, 1 1/2 cups cinnamon applesauce, 2 large eggs
Add in dry ingredients. To the mixing bowl, add the baking soda, baking powder, salt, cinnamon, and all-purpose flour. Stir until just mixed. Don’t over-mix!1 1/2 teaspoons baking soda, 1/2 teaspoon baking powder, 1 teaspoon kosher salt, 1 ½ teaspoons cinnamon, 2 cups all-purpose flour
Prep apples. Peel and core the apples. Dice finely, and then add to the bowl, and gently stir. Reserve a few pieces for the top of the muffins. Add the muffins to the batter and stir to combine.2 cups apples (use baking apples)
Add batter to muffin tins. To a 12-cup muffin tin, add the liners. Then use a large spoon to add the batter to the liners, filling almost to the top. Add a couple of small apple pieces to the top and an extra sprinkle of cinnamon.an extra sprinkle of cinnamon on top
Bake. Bake the muffins in a preheated 350 degree oven for 22-24 minutes or until done in the center.
Cool. Let the muffins sit in the muffin tins for about five minutes before removing to cooling racks.
Notes
You can use regular or unsweetened applesauce, instead of cinnamon applesauce.
Use your favorite baking apple for this recipe, diced in small pieces.
Reserve a couple of pieces of apple pieces top top the muffins - for presentation purposes only.
You can try some apple pie spice in place of the cinnamon for a more intense apple flavor.
Storing & Freezing:
You can store them in an airtight container on your counter for about three days.
These muffins freeze well for up to three months. Wrap them up tight in freezer bags for best results.
