Oatmeal Chocolate Chip Cookies

Oatmeal Chocolate Chip Cookies are the perfect thick and chewy cookies. Loaded with oatmeal and chocolate chips, you will definitely want more than one!

Ingredients

  • 1 cup unsalted butter - 2 sticks at room temperature
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 Tablespoon vanilla - I use Watkins vanilla
  • 2 1/2 cups old-fashioned oatmeal
  • 1 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 3/4 cups semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees.

  2. In a large standing mixer, cream the butter and sugars together until creamy. Add eggs and vanilla and mix.

  3. In a separate bowl, combine all dry ingredients - oatmeal, flour, baking soda, salt, and cinnamon.

  4. Pour dry ingredients with wet ingredients, and mix until just combined. Gently add chocolate chips. (I mix chips in by hand.)

  5. Place dough in refrigerator for two hours or overnight. The purpose for this step is to keep the cookies from getting too flat.

  6. Using a 1/4 cup measuring scoop, roll cookie dough into balls and place on cookie sheets. 

  7. Bake for 12 - 13 minutes, or until cookies are very slightly browned on top. Remove to cooling racks.
