Ingredients
1canBlack-Eyed Peas- rinsed and drained
1canMexicorn- drained
5largeroma tomatoes- diced without seeds
2freshjalapeño peppers- diced and de-seeded (leave a few seeds for spice)
1/4cupred onion- diced finely
1/4cupcilantro- finely chopped
salt and pepper- to taste
1largeavocado- chopped
1largelime- freshly squeezed over avocado
fewshakesred wine vinegar

Instructions
Add all ingredients to large bowl. To prep the tomatoes, slice them in half and squeeze out the seeds and liquid, then dice.
Season with salt and pepper to taste. Add a few shakes of red wine vinegar and the freshly squeezed lime juice. Taste and determine if you need more. Cover and refrigerate for at least one hour.
Serve with Tostito Scoops.
Notes
A few options to make the LUCKIEST dip in the new year:
Add even more black-eyed peas for even more luck!
Use green onion instead of red.
Include the jalapeño seeds and ribs for a BIG kick. (Beware of the spice!)
Using the lime juice will preserve the dip longer.
Instead of red wine vinegar, use balsamic.
This dip lasts up to two days in the refrigerator. It's best on the first day.
