Ingredients
For the fries:
3largesweet potatoes- or about 2 1/4 pounds
3Tablespoonsolive oil
2 ½Tablespoonscorn starch
2teaspoonchili powder
1teaspoongarlic powder
1teaspoonpaprika
½teaspooncayenne- or to taste
kosher salt - to taste
Instructions
For the fries:
Peel sweet potatoes and cut them into thin strips. Add to a large bowl and drizzle the olive oil over top and stir to combine.
Combine the seasonings in a small bowl (EXCEPT SALT!) - the chili powder, garlic powder, paprika, and cayenne.
Add cornstarch and use your hands to rub it into the potatoes. Then add the seasonings (EXCEPT SALT), and mix thoroughly.
Preheat ovens to 425 degrees. Arrange fries on two baking pans lined with parchment paper. Don't overlap the fries!
Place pans in ovens on top shelf. If you have only one oven, you can just put both pans in and rotate shelfs throughout cooking process.
Bake at 425 for 15 minutes. Gently flip fries and bake another 15 minutes, or until done. Remove from oven, and add a generous sprinkling of kosher salt.
