Bacon Wrapped Jalapeño Poppers are the perfect game day or party appetizer. Quick and easy, these poppers combine deseeded jalapeños, a creamy filling, and thinly sliced bacon. Leave a few seeds for a spicy kick!
Preheat oven to 425 degrees. Cover a baking sheet with some foil and place a wire rack on top.
Clean and halve the jalapeños. Remove seeds if desired.
To a medium bowl, combine the cream cheese, cheddar cheese, garlic powder, kosher salt, and freshly ground black pepper. Use a hand mixer to blend until creamy. Spoon the filling into the halved jalapeños.
A note on the bacon. I often par-cook the bacon to ensure that these are crispy. If par-cooking, I recommend baking it and watching closely to avoid over-cooking. You want the bacon to still be pliable enough to wrap around the stuffed jalapeños.
Wrap the thinly sliced bacon around the peppers and secure with a toothpick.
If using raw bacon, bake the jalapeño poppers in the preheated oven for 25 minutes, or until the bacon is crisp to your liking. If using par-cooked bacon, you'll only need about 10-15 minutes in the oven.
Serve hot.

Some jalapeños are hotter than others. Beware!
Always use gloves when handling the insides of jalapeños.
