Ingredients
2cupsblueberries
1/4cupsugar- plus a sprinkle
1/2mediumlemon- freshly squeezed
12oz.light rum
4oz.lime juice- freshly squeezed
6oz.club soda
3/4 - 1cupmint leaves
simple syrup- optional (for extra sweetener)
Instructions
Prep blueberries:
In a medium saucepan, combine blueberries, sugar, and freshly squeezed lemon. Cook over medium heat, using a potato masher to smash the blueberries. Simmer for about 10 minutes.
Remove pan, and strain the juice from the berry pulp, making sure you catch all the juices in a bowl. Place in the freezer to cool quickly, or refrigerate if time.
Make mojitos:
In a pitcher, combine the mint leaves, lime juice, and a sprinkle of sugar. Muddle the leaves for a minute or two, allowing the mint to break down.
To the pitcher, add the chilled blueberry juice (not the pulp), the light rum, and the club soda. Stir well.
Add lime wedges to the pitcher of mojitos, along with some fresh blueberries, if desired.
Serve:
Serve the mojitos in glasses with ice. Add a few extra blueberries and some fresh mint for garnish. Enjoy!
