Strawberry Walnut Breakfast Bars
These are a "healthified" breakfast bar, using coconut oil and fresh strawberries. A tasty breakfast option!

Ingredients

white whole-wheat flour

old fashioned oatmeal

chopped walnuts
1/3

brown sugar

baking soda

coconut oil
- melted

teaspoons
vanilla

cups
strawberries
- sliced

Tablespoon
lemon juice
- freshly squeezed

sugar
Instructions
Preheat oven to 350 degrees. Line an 8X8 baking dish with parchment paper.
Slice strawberries into a mixing bowl. Add lemon juice and one tablespoons of sugar, and mix well. Set aside.
In a mixing bowl, combine flour, oatmeal, brown sugar, cinnamon, baking soda, and salt. Mix well
Add melted coconut oil and vanilla extract, and stir until mixture is coated.
Reserve about 3/4 cup, and press remaining mixture into baking dish, using your fingers to spread evenly.
Add sliced strawberries over the bottom layer. Then top with reserved mixture, using fingers to add it in small clumps.
Bake for 25 minutes in preheated oven. Let bars cool completely before cutting.
Notes
These bars are best stored in the refrigerator, for up to 3-4 days.
