Ingredients
2Tablespoonsolive oil
2poundsboneless, skinless chicken thighs- sliced into strips
kosher salt and freshly ground black pepper- to taste
1/2cuppesto sauce - we use our homemade pesto sauce
16oz.packaged gnocchi
1cupcherry tomatoes- sliced in half
16oz.sliced mushrooms
Instructions
Prep. Preheat oven to 400 degrees. Spray a sheet pan with baking spray.
Prep chicken. Slice chicken into strips, removing visible fat as needed. Then place in a bowl with the olive oil, two tablespoons of pesto sauce, and seasonings.
Bake chicken. Place chicken (and juices) on prepared pan and bake for approximately 15 minutes, or until partially done.
Combine remaining ingredients. Add the tomatoes, mushrooms, gnocchi, and remaining pesto sauce to the pan. Stir ingredients together, spreading evenly to all sides of the pan.
Bake. Continue baking for an additional 20 minutes or so, or until chicken is baked through, or until chicken registers 165 degrees on a digital thermometer.
Serve. Serve chicken pesto gnocchi with some freshly shredded parmesan cheese.
